Pollo a la Strega

This is a very easy dish to make - thrown together in minutes, it can sit and simmer for pretty much as long as you like (within reason) Ideal when friends come over for dinner but you want to sit and chat for a while first! The following recipe feeds four people, but you can extend or reduce it according to the number of people you're going to be feeding.

You will need:

  • 4 large chicken breasts (skinned)
  • 2 tins of peeled chopped tomatoes
  • 1 large chopped onion
  • 1 or more glasses of dry white wine
  • A handful of chopped button mushrooms
  • 1 large clove of garlic (optional!)
  • Salt and pepper to taste
  • Plain boiled or steamed rice

And this is what you do:

Roughly chop the skinned chicken breasts into medium sized cubes. Cook the onion and garlic in an electric frypan in a little oil and butter (the butter gives a better "brown", and the oil stops the butter from burning! True!) until the onion is translucent, then add the roughly chopped chicken cubes and brown gently. Add salt and pepper to taste, then some white wine... When all the wine has evaporated, add some more... Note: do not have the frypan turned up too high! The chicken should only be simmering gently! Add the two tins of peeled chopped tomatoes, (and a small red chilli for zest, if desired) Add another glass of white wine, just to be on the safe side (we don't want the chicken to dry out, you know!), and give it a good stir. Put the lid on the frypan with the lid vent open if it has one (if it doesn't, tilt the lid a little) and leave it to simmer gently for at least 30 minutes or longer. If it's reducing too quickly, add some more white wine, or water, if there's no wine left - cooks tend to get very thirsty!

To serve:

Serve immediately on a bed of plain steamed rice.
